It's slice and dice as chefs sharpen skills

JAMAICA Blue Blacktown chef Glen Aldridge hopes to prove he is one of Australia's most promising chefs.

He's one of six contestants who beat almost 100 competitors from across Australia and New Zealand to make it to the Jamaica Blue Golden Cuisine grand final cook-off to be held on Thursday (July 31).

Mr Aldridge, 23, will team with two fellow finalists against the remaining three contenders in a two and a half hour mystery kitchen challenge that will call on each group to prepare and serve distinctive and seasonal dishes.

The details won't be revealed until the grand final.

Finalists will also demonstrate their knife skills and do a blindfold test, where they will be asked to identify 10 types of dairy product purely by smell and taste.

Grand finalists will also need to complete a separate blindfold test involving 10 types of chocolate, demonstrate their knowledge of working with chocolate and compete in chocolate stencilling exercises.

Mr Aldridge hopes to one day fuse his love of food with community work.

"My long-term goal is to own a business or two in the dining industry and affiliate those businesses with not-for-profit organisation Youth Off The Streets," he said.

"Good food can provide so much more than just nutrients. It can bring people together and fill their hearts, as well as their bellies. For me, cooking provides a sense of freedom."
