The next generation of the Talimanidis family is moving back to Lorne, promising a faster, simpler, louder, younger version of the restaurant that put the town on Victoria's food map.
Ipsos ("height" in Greek) opens Thursday, November 26 in the space that was home to Kosta's for 27 years.
Kosta and Pam Talimanidis, who now run one-hat A La Grecque at Aireys Inlet, sold Kosta's in 2003. But when the new owners closed the doors earlier this year, they asked the Talimanidis family to step in.
Kosta and Pam have teamed up with their sons Alex and Dominic, who will take the reins at Ipsos.
They've renovated throughout, giving the place a black-and-white colour scheme splashed with blue.
The menu will be Greek taverna with a modern Australian spin, says Pam Talimanidis, who'll keep an eye on the kitchen for the first few weeks. That means lots of salads, dips, grilled fish and shellfish, and three or four meat dishes.
Ipsos, at 48 Mountjoy Parade, Lorne, will initially open Thursday to Monday 11am-10pm, and daily from mid December.
